From the moment the cherries are picked, Eduar’s coffee is guided by care, intention, and a deep understanding of the land. His father first divided portions of the family farm among his children, giving each around two hectares. Eduar was drawn to specialty coffee by the rare and exotic varieties growing on his land, and by the extraordinary quality they could express. Through careful study, he recognized that his farm’s altitude, climate, and natural environment offered the ideal conditions for these coffees to thrive. What makes this coffee truly special is the attention it receives from farm to cup. Every stage is handled with precision, beginning with the selective picking of ripe cherries and continuing through each step of processing with close supervision and care. This thoughtful approach preserves the coffee’s character, allowing its unique attributes to shine clearly in the final cup.
Grown at La Villa Farm in Acevedo, Huila, at 1,670 masl, this lot showcases the distinctive character of the Papayo variety through a carefully managed natural process. After harvest, the coffee undergoes 48 hours of anaerobic fermentation in tank, enhancing fruit intensity and complexity. It is then transferred to a curtained dryer, where slow, even drying takes place in a controlled environment. With side ventilation for added control, drying typically lasts 15 to 25 days, followed by a dehydration stage to ensure stability and consistency. Each step is handled with precision to highlight the elegance of this Papayo lot and the character of its origin.
